Velmi vysok\u00fd pod\u00edl odebran\u00fdch vzork\u016f nesplnil po\u017eadavky pr\u00e1vn\u00edch p\u0159edpis\u016f v&nbsp;oblasti limit\u016f pro p\u0159\u00edtomnost bakteri\u00ed a takov\u00e9 potraviny p\u0159edstavuj\u00ed riziko pro zdrav\u00ed spot\u0159ebitele.<\/strong><\/p>\n\n\n\n<p>V&nbsp;obdob\u00ed do 1. 9. 2025 nevyhov\u011blo celkem 46 % vzork\u016f zmrzlin a 57 % vzork\u016f led\u016f do n\u00e1poj\u016f.<\/p>\n\n\n\n<p>P\u0159i kontrole se inspekto\u0159i SZPI mj. zam\u011b\u0159uj\u00ed na dodr\u017eov\u00e1n\u00ed bezpe\u010dnostn\u00edch a jakostn\u00edch parametr\u016f u uveden\u00fdch potravin, a to v\u010detn\u011b kontrol za\u0159\u00edzen\u00ed na jejich p\u0159\u00edpravu. Kontroly inspekto\u0159i realizovali zejm\u00e9na v cukr\u00e1rn\u00e1ch a dal\u0161\u00edch&nbsp;provozovn\u00e1ch spole\u010dn\u00e9ho stravov\u00e1n\u00ed.<\/p>\n\n\n\n<p>V&nbsp;roce 2025 inspekto\u0159i SZPI dosud laboratorn\u011b vyhodnotili 146 vzork\u016f to\u010den\u00fdch a kope\u010dkov\u00fdch zmrzlin a 67 z&nbsp;nich (46 %) nesplnilo hygienick\u00e9 limity. Ve vzorc\u00edch zmrzlin laboratorn\u00ed rozbory potvrdily nadlimitn\u00ed po\u010dty koloni\u00ed bakteri\u00ed \u010deledi Enterobacteriaceae. Za hlavn\u00ed p\u0159\u00ed\u010dinu nevyhovuj\u00edc\u00edch v\u00fdsledk\u016f lze pova\u017eovat nedodr\u017een\u00ed hygieny v\u00fdroby, nedostate\u010dnou sanitaci za\u0159\u00edzen\u00ed a nedodr\u017een\u00ed v\u00fdrobn\u00edho postupu p\u0159i p\u0159\u00edprav\u011b zmrzliny. Roli m\u016f\u017ee hr\u00e1t i nedostate\u010dn\u00e9 pro\u0161kolen\u00ed person\u00e1lu.<\/p>\n\n\n\n<p>Jednou z charakteristick\u00fdch&nbsp;p\u0159\u00ed\u010din probl\u00e9m\u016f u to\u010den\u00fdch zmrzlin je ne\u017e\u00e1douc\u00ed praxe, kdy provozovatel\u00e9 zmrzlinu na konci dne nelikviduj\u00ed, ale n\u00e1sleduj\u00edc\u00ed den ji vrac\u00ed zp\u011bt do stroje, \u010d\u00edm\u017e m\u016f\u017ee doch\u00e1zet k&nbsp;p\u0159en\u00e1\u0161en\u00ed bakteri\u00e1ln\u00ed kontaminace ze stroje na zmrzlinovou sm\u011bs a zp\u011bt.<\/p>\n\n\n\n<p>Mezi nevyhovuj\u00edc\u00edmi vzorky p\u0159eva\u017euje vanilkov\u00e1 zmrzlina, co\u017e lze p\u0159i\u010d\u00edst roz\u0161\u00ed\u0159enosti t\u00e9to p\u0159\u00edchut\u011b.<\/p>\n\n\n\n<p>P\u0159i kontrol\u00e1ch zmrzlin v&nbsp;roce 2024 nevyhov\u011blo po\u017eadavk\u016fm pr\u00e1vn\u00edch p\u0159edpis\u016f 52 % hodnocen\u00fdch vzork\u016f, v&nbsp;roce 2023 nevyhov\u011blo 45 %, v&nbsp;roce 2022 nevyhov\u011blo 53,3 %, v&nbsp;roce 2021 nevyhov\u011blo 48,3 % a v&nbsp;roce 2020 nevyhov\u011blo 51 % hodnocen\u00fdch vzork\u016f.<\/p>\n\n\n\n<p>V&nbsp;leto\u0161n\u00ed sez\u00f3n\u011b (do 1. 9. 2023) inspekto\u0159i SZPI dosud dokon\u010dili hodnocen\u00ed u 53 vzork\u016f led\u016f do n\u00e1poj\u016f a 30 z&nbsp;nich (57 %) nesplnilo zdravotn\u00ed nebo hygienick\u00e9 limity. Ze sledovan\u00fdch parametr\u016f byl potvrzen v\u00fdskyt bakteri\u00ed Escherichia coli, enterokok\u016f, koliformn\u00edch bakteri\u00ed, bakteri\u00e1ln\u00edch koloni\u00ed rostouc\u00edch p\u0159i 22\u00b0C a 36\u00b0C. Za hlavn\u00ed p\u0159\u00ed\u010dinu nevyhovuj\u00edc\u00edch zji\u0161t\u011bn\u00ed lze ozna\u010dit podcen\u011bn\u00ed hygienick\u00e9 praxe p\u0159i v\u00fdrob\u011b ledu a pravideln\u00e9 dezinfekce v\u00fdrobn\u00edk\u016f ledu.<\/p>\n\n\n\n<p>P\u0159i kontrol\u00e1ch led\u016f v&nbsp;roce 2024 nevyhov\u011blo po\u017eadavk\u016fm pr\u00e1vn\u00edch p\u0159edpis\u016f 37,5 % hodnocen\u00fdch vzork\u016f, v&nbsp;roce 2023 nevyhov\u011blo 64 %, v&nbsp;roce 2022 nevyhov\u011blo 74,5 %, v roce 2021 nevyhov\u011blo 68,6 % a v&nbsp;roce 2020 nevyhov\u011blo 51 % hodnocen\u00fdch vzork\u016f.<\/p>\n\n\n\n<p>Z v\u00fdsledk\u016f leto\u0161n\u00edch kontrol i kontrol v\u00a0p\u0159edchoz\u00edch letech je z\u0159ejm\u00e9, \u017ee v\u00fdznamn\u00e1 \u010d\u00e1st provozovatel\u016f st\u00e1le hrub\u011b podce\u0148uje rizika spojen\u00e1 s nedodr\u017een\u00edm <a href=\"https:\/\/potravinyx.cz\/?p=14\" target=\"_blank\" rel=\"noreferrer noopener\">hygienick\u00fdch postup\u016f p\u0159i v\u00fdrob\u011b<\/a>, skladov\u00e1n\u00ed a prodeji uveden\u00e9ho sortimentu a p\u0159i \u00fadr\u017eb\u011b a \u0159\u00e1dn\u00e9 pravideln\u00e9 dezinfekci v\u00fdrobn\u00edch za\u0159\u00edzen\u00ed, \u010deho\u017e n\u00e1sledkem je poru\u0161en\u00ed hygienick\u00fdch limit\u016f pro p\u0159\u00edtomnost mikroorganism\u016f a potenci\u00e1ln\u00ed ohro\u017een\u00ed zdrav\u00ed spot\u0159ebitel\u016f.<\/p>\n\n\n\n<p>Pod\u00edl nevyhovuj\u00edc\u00edch vzork\u016f nelze zev\u0161eobecnit pro cel\u00fd trh, proto\u017ee SZPI vyb\u00edr\u00e1 vzorky k&nbsp;odb\u011bru dle anal\u00fdzy rizika a \u010dast\u011bji prov\u011b\u0159uje provozovny, kde o\u010dek\u00e1v\u00e1 probl\u00e9m. I bezprobl\u00e9mov\u00ed provozovatel\u00e9 jsou v\u0161ak pravideln\u011b kontrolov\u00e1ni, by\u0165 s&nbsp;ni\u017e\u0161\u00ed frekvenc\u00ed.<\/p>\n\n\n\n<p>V&nbsp;provozovn\u00e1ch, kde inspekto\u0159i SZPI odebrali nevyhovuj\u00edc\u00ed vzorky, na m\u00edst\u011b zak\u00e1zali u\u017e\u00edv\u00e1n\u00ed za\u0159\u00edzen\u00ed (nap\u0159. zmrzlinov\u00fd stroj a souvisej\u00edc\u00ed n\u00e1\u010din\u00ed), nebo zak\u00e1zali v\u00fdrobu ledu, na\u0159\u00eddili provozovateli proveden\u00ed sanitace a n\u00e1sledn\u00e9 proveden\u00ed mikrobiologick\u00e9ho rozboru akreditovanou laborato\u0159\u00ed.
