Inspekto\u0159i tak zjistili za dan\u00e9 obdob\u00ed pochyben\u00ed u 26,2% kontrol a spole\u010dn\u00e9 stravov\u00e1n\u00ed tak p\u0159edstavuje nejproblemati\u010dt\u011bj\u0161\u00ed segment ze v\u0161ech typ\u016f provozoven v&nbsp;kompetenci SZPI.<\/p>\n\n\n\n<p>SZPI pova\u017euje fakt, \u017ee cca ka\u017ed\u00e1 \u010dtvrt\u00e1 kontrola ve spole\u010dn\u00e9m stravov\u00e1n\u00ed zjistila poru\u0161en\u00ed pr\u00e1vn\u00edch p\u0159edpis\u016f za neakceptovateln\u00fd a d\u00e1le bude vyv\u00edjet maxim\u00e1ln\u00ed \u00fasil\u00ed o zlep\u0161en\u00ed situace v&nbsp;segmentu.<\/p>\n\n\n\n<p>Z\u00e1rove\u0148 je pot\u0159eba zd\u016fraznit, \u017ee vlivem c\u00edlen\u00e9ho kontroln\u00edho tlaku inspektor\u016f SZPI do\u0161lo postupn\u011b k&nbsp;v\u00fdrazn\u00e9mu sn\u00ed\u017een\u00ed mno\u017estv\u00ed proh\u0159e\u0161k\u016f zejm\u00e9na v&nbsp;oblastech ohro\u017euj\u00edc\u00edch zdrav\u00ed spot\u0159ebitel\u016f. Po zah\u00e1jen\u00ed kontrol v&nbsp;roce 2015 v&nbsp;restaurac\u00edch se uk\u00e1zalo, \u017ee jejich stav je velmi zanedban\u00fd, v\u00fdznamn\u00e1 \u010d\u00e1st provozovatel\u016f si nen\u00ed v\u011bdoma ani nez\u00e1kladn\u011bj\u0161\u00edch povinnost\u00ed a inspekto\u0159i byli nuceni na m\u00edst\u011b uzav\u0159\u00edt 144 provozoven spole\u010dn\u00e9ho stravov\u00e1n\u00ed pro neakceptovateln\u00fd hygienick\u00fd stav. To p\u0159edstavovalo 65,2% provozoven uzav\u0159en\u00fdch SZPI. V&nbsp;roce 2020 \u0161lo o 22 uzav\u0159en\u00fdch provozoven a v&nbsp;roce 2019, tedy p\u0159ed vyhl\u00e1\u0161en\u00edm nouzov\u00e9ho stavu, o 49 provozoven. V\u00fdskyt nejz\u00e1va\u017en\u011bj\u0161\u00edch poru\u0161en\u00ed tak v&nbsp;obdob\u00ed 2015\u20132020 poklesl o v\u00edce ne\u017e dv\u011b t\u0159etiny. St\u0159edn\u011b a m\u00e9n\u011b z\u00e1va\u017en\u00e9 proh\u0159e\u0161ky v&nbsp;oblasti hygienick\u00fdch po\u017eadavk\u016f p\u0159esto z\u016fst\u00e1vaj\u00ed probl\u00e9mem, pochyben\u00ed inspekto\u0159i zjistili u 31% z&nbsp;celkem 45&nbsp;508 jejich kontrol ve spole\u010dn\u00e9m stravov\u00e1n\u00ed (2015: 36,2%, 2020: 29,7%).<\/p>\n\n\n\n<p>K&nbsp;typick\u00fdm d\u016fvod\u016fm vedouc\u00edm k uzav\u0159en\u00ed pat\u0159\u00ed dlouhodob\u00e1 rezignace na \u00faklid v&nbsp;provozovn\u011b, rizikov\u00fd technick\u00fd stav za\u0159\u00edzen\u00ed a prostor provozovny, zapl\u00edsn\u011bn\u00ed prostor a chlad\u00edc\u00edch za\u0159\u00edzen\u00ed, v\u00fdskyt \u0161k\u016fdc\u016f a absence jejich regulace, chyb\u011bj\u00edc\u00ed p\u0159\u00edvod tepl\u00e9 vody, nevyhovuj\u00edc\u00ed podm\u00ednky skladov\u00e1n\u00ed, nezvl\u00e1dnut\u00fd odvoz odpad\u016f apod. Jde o podm\u00ednky p\u0159\u00edmo ohro\u017euj\u00edc\u00ed zdrav\u00ed spot\u0159ebitel\u016f.<\/p>\n\n\n\n<p>Inspekto\u0159i SZPI&nbsp; ve spole\u010dn\u00e9m stravov\u00e1n\u00ed prov\u00e1d\u00ed v&nbsp;pln\u00e9m rozsahu kontroly hygienick\u00fdch a mikrobiologick\u00fdch po\u017eadavk\u016f: zaji\u0161t\u011bn\u00ed provozn\u00ed hygieny (pravideln\u00fd \u00faklid, \u010di\u0161t\u011bn\u00ed a sanitace), prevence \u0161\u00ed\u0159en\u00ed onemocn\u011bn\u00ed z potravin, postupy k regulaci \u0161k\u016fdc\u016f, zdravotn\u00ed zp\u016fsobilost zam\u011bstnanc\u016f, p\u0159\u00edtomnost zdrav\u00ed \u0161kodliv\u00fdch mikroorganism\u016f nap\u0159.&nbsp;<em>Salmonella<\/em>&nbsp;spp.,&nbsp;<em>Listeria monocytogenes<\/em>,&nbsp;<em>Campylobacter<\/em>&nbsp;spp.,&nbsp;<em>Escherichia coli<\/em>&nbsp;tvo\u0159\u00edc\u00ed shigatoxiny, stafylokokov\u00e9 enterotoxiny, noroviry, v\u00fdjime\u010dn\u011b i viry hepatitidy A a E; mikrobiologick\u00e1 krit\u00e9ria hygieny potravin \u2013 bakterie \u010deledi&nbsp;<em>Enterobacteriaceae<\/em>,&nbsp;<em>E.coli<\/em>; mikrobiologick\u00e1 krit\u00e9ria zdravotn\u00ed nez\u00e1vadnosti a jakosti led\u016f ur\u010den\u00fdch do n\u00e1poj\u016f &#8211; koliformn\u00ed bakterie, intestin\u00e1ln\u00ed enterokoky,&nbsp;<em>E.coli<\/em>,&nbsp;<em>Clostridium perfringens<\/em>, atd.<\/p>\n\n\n\n<p>Zlep\u0161en\u00ed situace inspekce konstatovala v&nbsp;oblasti zna\u010den\u00ed alergenn\u00edch l\u00e1tek v&nbsp;pokrmech, kdy v&nbsp;roce 2015 chybovalo 18% provozovatel\u016f, v&nbsp;roce 2020 jen 5,1% (v r. 2019 \u0161lo o 6,1%).<\/p>\n\n\n\n<p>V\u00fdrazn\u00fd probl\u00e9m spole\u010dn\u00e9ho stravov\u00e1n\u00ed, kter\u00fd nebyl p\u0159ed rokem 2015 syst\u00e9mov\u011b \u0159e\u0161en, p\u0159edstavuje klam\u00e1n\u00ed spot\u0159ebitele a fal\u0161ov\u00e1n\u00ed. Jde o praxi, kdy je v&nbsp;nab\u00eddce uveden\u00e1 slo\u017eka pokrmu nahrazena jinou, typicky levn\u011bj\u0161\u00ed slo\u017ekou. Nap\u0159. kontroln\u00ed akce zam\u011b\u0159en\u00e1 na druhovou pravost masa v&nbsp;restaurac\u00edch a rychl\u00e9m ob\u010derstven\u00ed potvrdila klam\u00e1n\u00ed spot\u0159ebitele u t\u0159etiny z&nbsp;hodnocen\u00fdch vzork\u016f, mj. v \u201edan\u010d\u00edm gul\u00e1\u0161i\u201c, \u201etelec\u00edm a ku\u0159ec\u00edm kebabu\u201c aj. D\u00e1le se jedn\u00e1 o nab\u00edzen\u00ed pokrm\u016f ozna\u010den\u00fdch \u201esv\u00ed\u010dkov\u00e1 na smetan\u011b\u201c, \u201et\u011bstoviny se smetanovou om\u00e1\u010dkou\u201c, \u201epizza na smetanov\u00e9m z\u00e1klad\u011b\u201c, ve skute\u010dnost ale jde o pokrmy p\u0159ipraven\u00e9 na b\u00e1zi n\u00e1hra\u017eky z rostlinn\u00fdch tuk\u016f. \u0158ada provozovatel\u016f klame spot\u0159ebitele i uv\u00e1d\u011bn\u00edm slo\u017eek \u201emozzarella\u201c, \u201esma\u017een\u00fd s\u00fdr\u201c, \u201esma\u017een\u00fd Eidam\u201c, p\u0159i\u010dem\u017e kontrola potvrdla pou\u017eit\u00ed levn\u011bj\u0161\u00ed n\u00e1hra\u017eky z&nbsp;rostlinn\u00e9ho tuku. Klam\u00e1n\u00ed inspekto\u0159i SZPI zji\u0161\u0165uj\u00ed i u slo\u017eek ozna\u010den\u00fdch \u201e\u0161unka\u201c, \u201eparmsk\u00e1 \u0161unka\u201c, \u201eProsciutto di Parma\u201c aj. Provozovatel\u00e9 spot\u0159ebitele klamou i ozna\u010dov\u00e1n\u00edm n\u00e1poj\u016f, \u201eD\u017eus \u2013 100% ovocn\u00fd pod\u00edl\u201c je ve skute\u010dnosti n\u00e1poj s&nbsp;ni\u017e\u0161\u00edm pod\u00edlem ovoce, \u201eMeru\u0148ka \u2013 ovocn\u00fd destil\u00e1t\u201c je aromatizovan\u00e1 lihovina, pivo ozna\u010den\u00e9 \u201e12\u00b0 le\u017e\u00e1k\u201c je n\u00e1pojem ni\u017e\u0161\u00ed stup\u0148ovitosti, \u201ev\u00edno z&nbsp;Moravy\u201c ve skute\u010dnosti poch\u00e1z\u00ed ze Slovenska nebo Ma\u010farska, n\u00e1poj deklarovan\u00fd \u201e\u010dokol\u00e1da\u201c obsahuje ni\u017e\u0161\u00ed ne\u017e po\u017eadovan\u00fd obsah kakaa.<\/p>\n\n\n\n<p>Fal\u0161ov\u00e1n\u00ed a klam\u00e1n\u00ed spot\u0159ebitele inspekto\u0159i zjistili u 23% z&nbsp;celkem 10&nbsp;451 hodnocen\u00fdch vzork\u016f pokrm\u016f a n\u00e1poj\u016f.<\/p>\n\n\n\n<p>Pro v\u00fdkon v\u00fd\u0161e uveden\u00fdch kontrol SZPI disponuje \u0161pi\u010dkov\u00fdm vybaven\u00edm v&nbsp;akreditovan\u00fdch laborato\u0159\u00edch, kter\u00e9 realizuje akreditovan\u00fdmi metodami, p\u0159\u00edpadn\u011b ve spolupr\u00e1ci s&nbsp;extern\u00edmi akreditovan\u00fdmi laborato\u0159emi v&nbsp;\u010cR i zahrani\u010d\u00ed.
