Spot\u0159ebitelsk\u00e1 organizace dTest se zam\u011b\u0159ila na tu hladkou, kter\u00e1 m\u00e1 v kuchyni nej\u0161ir\u0161\u00ed vyu\u017eit\u00ed, a v laborato\u0159i nechala otestovat 14 vzork\u016f z \u010desk\u00fdch supermarket\u016f. Jak to dopadlo s bezpe\u010dnost\u00ed? A je t\u0159eba si za dobrou mouku p\u0159iplatit?<\/h2>\n\n\n\n<p>Testov\u00e1n\u00edm pro\u0161ly hladk\u00e9 mouky z&nbsp;r\u016fzn\u00fdch cenov\u00fdch kategori\u00ed, p\u016fvodem z&nbsp;\u010ceska i od slovensk\u00e9ho v\u00fdrobce a&nbsp;jeden z&nbsp;testovan\u00fdch vzork\u016f poch\u00e1zel z&nbsp;bio p\u0161enice. \u00davodn\u00ed \u010d\u00e1st testu pat\u0159ila bezpe\u010dnosti. \u201eB\u011bhem p\u011bstov\u00e1n\u00ed a skladov\u00e1n\u00ed se do mouky mohou dostat ne\u017e\u00e1douc\u00ed mikrobi. V\u011bt\u0161inou se jedn\u00e1 o zdrav\u00ed neohro\u017euj\u00edc\u00ed p\u016fdn\u00ed bakterie a&nbsp;ne\u0161kodn\u00e9 pl\u00edsn\u011b,\u201c uv\u00e1d\u00ed \u0161\u00e9fredaktorka \u010dasopisu dTest Hana Hoffmannov\u00e1 a dod\u00e1v\u00e1: \u201eKrom\u011b ne\u0161kodn\u00e9 mikrofl\u00f3ry se v\u0161ak mohou objevit i&nbsp;rizikov\u00e9 druhy. Hledali jsme proto pl\u00edsn\u011b produkuj\u00edc\u00ed toxiny, koliformn\u00ed bakterie a&nbsp;d\u00e1le bakterie Escherichia coli, Salmonella a&nbsp;Staphylococcus aureus.\u201c V\u0161em testovan\u00fdm vzork\u016fm se zm\u00edn\u011bn\u00e9 organismy vyhnuly. Podobn\u011b to bylo i p\u0159i zji\u0161\u0165ov\u00e1n\u00ed pl\u00edsn\u00ed a mykotoxin\u016f. Pouze u \u0161esti vzork\u016f laborato\u0159 na\u0161la deoxynivalenol, kter\u00fd zp\u016fsobuje zejm\u00e9na za\u017e\u00edvac\u00ed pot\u00ed\u017ee, ale ten byl odhalen jen v&nbsp;podlimitn\u00edm mno\u017estv\u00ed. Laborato\u0159 se d\u00e1le zam\u011b\u0159ila na rezidua v\u00edce ne\u017e 600 slou\u010denin pesticid\u016f. V\u011bt\u0161ina mouk byla naprosto \u010dist\u00e1 a zbytky l\u00e1tek proti \u0161k\u016fdc\u016fm byly zji\u0161t\u011bny pouze u&nbsp;p\u011bti vzork\u016f.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"450\" src=\"http:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky-800x450.jpg\" alt=\"\" class=\"wp-image-3649\" srcset=\"https:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky-800x450.jpg 800w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky-300x169.jpg 300w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky-1536x864.jpg 1536w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky-678x381.jpg 678w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2020\/04\/palacinky.jpg 1920w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>Dal\u0161\u00ed \u010d\u00e1st testu se zam\u011b\u0159ila na tzv. praktick\u00e9 v\u00fdkony. Pat\u0159\u00ed sem schopnost vytv\u00e1\u0159et kyp\u0159ic\u00ed plyn, peka\u0159sk\u00e1 s\u00edla a&nbsp;barva. V&nbsp;peka\u0159sk\u00e9 a&nbsp;mlyn\u00e1\u0159sk\u00e9 praxi se pro zji\u0161\u0165ov\u00e1n\u00ed funk\u010dn\u00edch vlastnost\u00ed mouky pou\u017e\u00edvaj\u00ed speci\u00e1ln\u00ed laboratorn\u00ed m\u011b\u0159en\u00ed. dTest v\u0161ak zvolil spot\u0159ebitelsk\u00fd pohled a \u201efunk\u010dnost\u201c mouky nechal ov\u011b\u0159it prakticky \u2013 pe\u010den\u00edm lit\u00e9ho kol\u00e1\u010de, kynut\u00fdch boch\u00e1nk\u016f a p\u0159\u00edpravou pala\u010dinek. U&nbsp;hotov\u00fdch v\u00fdtvor\u016f se pak hodnotila barva, konzistence a&nbsp;objem.<\/p>\n\n\n\n<p>\u201eZe v\u0161ech mouk se poda\u0159ilo up\u00e9ct obstojn\u00fd kol\u00e1\u010d. Nejv\u00fdznamn\u011bj\u0161\u00ed rozd\u00edly jsme zaznamenali u&nbsp;objemu. N\u00e1zorn\u011b to ukazuje jeho n\u00e1r\u016fst, co\u017e je procentu\u00e1ln\u00ed \u00fadaj o&nbsp;rozd\u00edlu objemu t\u011bsta a&nbsp;hotov\u00e9ho v\u00fdrobku. M\u00edra n\u00e1r\u016fstu se pohybovala od&nbsp;163&nbsp;% a\u017e pod 213&nbsp;%,\u201c vysv\u011btluje Hoffmannov\u00e1. Nejm\u00e9n\u011b bod\u016f za&nbsp;v\u00fdrobek z&nbsp;lit\u00e9ho t\u011bsta sesb\u00edrala mouka Pernerka. U&nbsp;pala\u010dinek se hodnotila hladkost t\u011bsta a jeho na\u0161leh\u00e1n\u00ed a po usma\u017een\u00ed tak\u00e9 barva. Na chvostu skon\u010dila Babi\u010d\u010dina volba, kter\u00e1 ztratila body kv\u016fli slab\u011bji na\u0161lehan\u00e9mu t\u011bstu. U kynut\u00e9ho t\u011bsta zase bylo mo\u017en\u00e9 nejl\u00e9pe poznat, jak mouka pom\u00e1h\u00e1 kvasink\u00e1m p\u0159i kyp\u0159en\u00ed, i&nbsp;schopnost lepku zajistit pe\u010divu v\u00fdrazn\u011b klenut\u00fd tvar. U upe\u010den\u00fdch boch\u00e1nk\u016f hodnotitel\u00e9 zkoumali tvar, vzhled a barvu k\u016frky a&nbsp;tak\u00e9 konzistenci st\u0159\u00eddky. D\u016fraz kladli na&nbsp;v\u00fdrazn\u00e9 klenut\u00ed, zlatavou nepopraskanou k\u016frku a&nbsp;pravideln\u011b p\u00f3rovitou st\u0159\u00eddku. S&nbsp;kvalitou boch\u00e1nk\u016f byli vcelku spokojeni, dostate\u010dn\u00e1 zn\u00e1mka padla pouze jednou, a&nbsp;to za&nbsp;barvu k\u016frky u&nbsp;zna\u010dky Billa.<\/p>\n\n\n\n<p>\u201ePokud jde o informace uveden\u00e9 na obalech, sledovali jsme deklaraci p\u016fvodu a&nbsp;p\u0159\u00edpadnou biocertifikaci. Ozna\u010den\u00edm bio se pochlubila pouze zna\u010dka Albert\/Nature\u2018s Promise a&nbsp;chemick\u00e9 anal\u00fdzy potvrdily, \u017ee je u&nbsp;n\u00ed i&nbsp;z&nbsp;tohoto hlediska v\u0161e v&nbsp;po\u0159\u00e1dku,\u201c \u0159\u00edk\u00e1 Hoffmannov\u00e1.<\/p>\n\n\n\n<p>V&nbsp;p\u0159\u00edpad\u011b mouky obecn\u011b nen\u00ed nutn\u00e9 uv\u00e1d\u011bt p\u016fvod pou\u017eit\u00e9 p\u0161enice. Dobrou n\u00e1pov\u011bdou je v\u0161ak logo \u010cesk\u00e1 potravina, co\u017e u&nbsp;jednoslo\u017ekov\u00fdch potravin znamen\u00e1, \u017ee byly vyrobeny 100% z&nbsp;\u010desk\u00fdch surovin. T\u00edmto logem se py\u0161nily hned t\u0159i vzorky. Podobn\u00fd v\u00fdznam m\u00e1 i&nbsp;logo Region\u00e1ln\u00ed potravina, kter\u00e9 se objevilo na&nbsp;obalu jedn\u00e9 z&nbsp;testovan\u00fdch mouk.<\/p>\n\n\n\n<p>\u201eNejv\u011bt\u0161\u00edm p\u0159ekvapen\u00edm pro n\u00e1s bylo to, \u017ee dobr\u00e1 mouka rozhodn\u011b nemus\u00ed b\u00fdt drah\u00e1.
