Nav\u00edc alergeny ve \u017eloutku se varem dob\u0159e rozkl\u00e1daj\u00ed a p\u0159est\u00e1vaj\u00ed b\u00fdt nebezpe\u010dn\u00e9. Alergik pak m\u016f\u017ee j\u00edst dokonce cel\u00e1 vejce. Je t\u0159eba opatrn\u011b otestovat.<\/p>\n<h2>Alergie na b\u00edlek<\/h2>\n<p>M\u016f\u017eeme vyzkou\u0161et j\u00eddla vyr\u00e1b\u011bn\u00e1 pouze s\u00a0p\u0159id\u00e1n\u00edm \u017eloutku. Alergeny v\u00a0b\u00edlku se teplem rozkl\u00e1daj\u00ed jen \u010d\u00e1ste\u010dn\u011b. Potraviny, kter\u00e9 obsahuj\u00ed malou koncentraci vajec a z\u00e1rove\u0148 jsou d\u016fkladn\u011b uva\u0159en\u00e9 nebo upe\u010den\u00e9, tak n\u011bkter\u00fdm vaje\u010dn\u00fdm alergik\u016fm nemus\u00ed zp\u016fsobovat obt\u00ed\u017ee. M\u00edchan\u00e1 vejce nebo hemenex v\u0161ak nad\u00e1le budou rizikov\u00e9. Velmi z\u00e1le\u017e\u00ed na m\u00ed\u0159e alergick\u00e9 p\u0159ecitliv\u011blosti ka\u017ed\u00e9ho pacienta!<\/p>\n<h2>Alergie na vejce a kojen\u00ed<\/h2>\n<p>Spolu s\u00a0kravsk\u00fdm ml\u00e9kem pat\u0159\u00ed vejce mezi nej\u010dast\u011bj\u0161\u00ed alergeny, kter\u00e9 zp\u016fsobuj\u00ed potravinovou alergii nebo zhor\u0161uj\u00ed atopick\u00fd ekz\u00e9m u kojen\u00fdch d\u011bt\u00ed. \u010c\u00e1st vaje\u010dn\u00fdch b\u00edlkovin sn\u011bden\u00fdch maminkou se toti\u017e dost\u00e1v\u00e1 do mate\u0159sk\u00e9ho ml\u00e9ka.<\/p>\n<p>Pokud se alergologick\u00fdm testem neboe elimina\u010dn\u00ed dietou prok\u00e1\u017ee, \u017ee za zdravotn\u00ed probl\u00e9my kojence mohou opravdu vejce, maminka m\u00e1 dv\u011b mo\u017enosti:<\/p>\n<ul>\n<li>skon\u010dit s\u00a0kojen\u00edm \u2013 z\u00e1le\u017e\u00ed na v\u011bku d\u00edt\u011bte a n\u00e1zoru o\u0161et\u0159uj\u00edc\u00edho l\u00e9ka\u0159e<\/li>\n<li>po dobu kojen\u00ed vylou\u010dit ze sv\u00e9 stravy vaj\u00ed\u010dka<\/li>\n<\/ul>\n<h2>Kontaktn\u00ed alergie na vejce<\/h2>\n<p>Lid\u00e9 se silnou alergi\u00ed na vejce by si m\u011bli d\u00e1vat pozor rovn\u011b\u017e na to, aby se jim vejce nedostalo na poko\u017eku nebo dokonce do oka. To se p\u0159i \u0161leh\u00e1n\u00ed m\u016f\u017ee snadno st\u00e1t. V\u00fdsledn\u00e9 podr\u00e1\u017ed\u011bn\u00ed za to nestoj\u00ed.<\/p>\n<p>Alergeny vaje\u010dn\u00e9ho p\u016fvodu se mohou objevit i v\u00a0kosmetice. Zn\u00e1m\u00e9 jsou nap\u0159\u00edklad v\u00fd\u017eivn\u00e9 vaje\u010dn\u00e9 \u0161ampony nebo dom\u00e1c\u00ed ple\u0165ov\u00e9 masky.<\/p>\n<h2>\u010c\u00edm nahradit vejce v\u00a0kuchyni<\/h2>\n<p>I kdy\u017e se to m\u016f\u017ee zd\u00e1t jako nere\u00e1ln\u00e9, vejce se daj\u00ed p\u0159i va\u0159en\u00ed a pe\u010den\u00ed do zna\u010dn\u00e9 m\u00edry nahradit:<\/p>\n<p>pala\u010dinky, brambor\u00e1ky, l\u00edvance\u00a0\u2013 m\u00edsto vaj\u00ed\u010dka do t\u011bsta vm\u00edch\u00e1me l\u017e\u00edci bramborov\u00e9ho nebo kuku\u0159i\u010dn\u00e9ho \u0161krobu nebo l\u017ei\u010dku mlet\u00e9ho ln\u011bn\u00e9ho sem\u00ednka (k mlet\u00ed je ide\u00e1ln\u00ed ml\u00fdnek na m\u00e1k)<\/p>\n<p>kynut\u00e1 t\u011bsta (buchty, v\u00e1no\u010dky, knedl\u00edky atd.)\u00a0\u2013 d\u00edky p\u0159\u00edtomnosti dro\u017ed\u00ed dr\u017e\u00ed i bez vejce, pouze p\u0159id\u00e1me malinko v\u00edce tuku nebo tekutiny<\/p>\n<p>lit\u00e1 t\u011bsta (b\u00e1bovky, muffiny, bublaniny, pi\u0161kotov\u00e9 korpusy apod.)\u00a0\u2013 funkci pojiva dob\u0159e pln\u00ed kyp\u0159ic\u00ed pr\u00e1\u0161ek (1 s\u00e1\u010dek zastoup\u00ed a\u017e 2 vejce), pevnosti v\u00fdsledn\u00e9ho pe\u010diva lze je\u0161t\u011b pomoci p\u0159id\u00e1n\u00edm \u0161krobu (1 l\u017e\u00edce na cca 250 g mouky), s\u00f3jov\u00e9 mouky (d\u00e1v\u00e1me zhruba 5\u00a0% z\u00a0celkov\u00e9 hmotnosti v\u0161ech pou\u017eit\u00fdch mouk) nebo \u017eelatiny (10gramov\u00fd s\u00e1\u010dek nam\u00edsto 3 vajec)<\/p>\n<p>cukrov\u00ed\u00a0(v\u00e1no\u010dn\u00ed, pern\u00ed\u010dky, cookies apod.) \u2013 lineck\u00e1 a jin\u00e1 tukov\u00e1 t\u011bsta se obejdou zcela bez vajec, v\u00a0ostatn\u00edch p\u0159\u00edpadech do t\u011bsta p\u0159id\u00e1me vrchovatou l\u017ei\u010dku \u0161krobu rozm\u00edchanou v\u00a0100 ml vody<\/p>\n<p>obalov\u00e1n\u00ed \u0159\u00edzk\u016f\u00a0\u2013 nam\u00edsto tradi\u010dn\u00edho \u201etrojobalu\u201c (mouka, vejce, strouhanka) pou\u017e\u00edv\u00e1me speci\u00e1ln\u00ed \u201edvojobal\u201c: prvn\u00ed vrstva je t\u011bst\u00ed\u010dko vytvo\u0159en\u00e9 z\u00a01 l\u017e\u00edce \u0161krobu, 250 ml ml\u00e9ka, \u0161petky soli a trochy polohrub\u00e9 mouky na dohu\u0161t\u011bn\u00ed, druh\u00e1 vrstva je tradi\u010dn\u00ed strouhanka<\/p>\n<p>sekan\u00e1, karban\u00e1tky\u00a0(masov\u00e9 i zeleninov\u00e9) \u2013 obejdou se bez vejce<\/p>\n<p>tvarohov\u00e9 n\u00e1pln\u011b\u00a0\u2013 vaj\u00ed\u010dko nahrad\u00edme vanilkov\u00fdm pudinkem<\/p>\n<p>ma\u0161lov\u00e1n\u00ed t\u011bsta\u00a0\u2013 nam\u00edsto vejcem pot\u00edr\u00e1me olejem, m\u00e1slem nebo ml\u00e9kem<\/p>\n<p>V\u00a0obchodech se ji\u017e \u0159adu let prod\u00e1v\u00e1 v\u00fdrobek\u00a0Vajahit,\u00a0kter\u00fdm se daj\u00ed nahradit cel\u00e1 vejce nebo \u017eloutky p\u0159i pe\u010den\u00ed a va\u0159en\u00ed. Rad\u011bji jej ale nepou\u017e\u00edvejme do j\u00eddel ur\u010den\u00fdch mal\u00fdm alergik\u016fm a atopik\u016fm, proto\u017ee hlavn\u00edmi slo\u017ekami jsou s\u00f3ja a ml\u00e9\u010dn\u00e1 syrov\u00e1tka.<\/p>\n<h2>Jak p\u0159\u00edsn\u011b mus\u00edme dietu dodr\u017eovat?<\/h2>\n<p>O tom, zda m\u016f\u017eeme j\u00edst alespo\u0148 potraviny s\u00a0ozna\u010den\u00edm \u201em\u016f\u017ee obsahovat stopov\u00e9 mno\u017estv\u00ed vajec\u201c, se porad\u00edme s\u00a0l\u00e9ka\u0159em. D\u00e1vka vaje\u010dn\u00fdch alergen\u016f, kterou m\u016f\u017eeme zkonzumovat, ani\u017e by se objevila alergick\u00e1 reakce, vyplyne z\u00a0alergologick\u00fdch test\u016f.
