{"id":3489,"date":"2019-05-19T11:33:14","date_gmt":"2019-05-19T10:33:14","guid":{"rendered":"http:\/\/potravinyx.cz\/?p=3489"},"modified":"2026-01-24T09:48:57","modified_gmt":"2026-01-24T08:48:57","slug":"desinfekce-octem-kdy-a-proc-jej-nepouzit","status":"publish","type":"post","link":"https:\/\/potravinyx.cz\/?p=3489","title":{"rendered":"Dezinfekce octem, kdy a pro\u010d jej (ne)pou\u017e\u00edt"},"content":{"rendered":"<p>V posledn\u00ed dob\u011b je st\u00e1le popul\u00e1rn\u011bj\u0161\u00ed pou\u017eit\u00ed octu k \u010di\u0161t\u011bn\u00ed a dezinfekci v potravin\u00e1\u0159sk\u00e9m pr\u016fmyslu, a to hlavn\u011b v v za\u0159\u00edzen\u00edch spole\u010dn\u00e9ho stravov\u00e1n\u00ed.\u00a0Z druh\u00e9ho b\u0159ehu ze stran kontroln\u00edch org\u00e1nu je v\u0161ak reakce negativn\u00ed.<\/p>\n<p>Kyselina octov\u00e1 (lat. acidum aceticum), ethanov\u00e1 kyselina, je druh\u00e1 nejjednodu\u0161\u0161\u00ed jednosytn\u00e1 organick\u00e1 (karboxylov\u00e1) kyselina. Je to za norm\u00e1ln\u00edch podm\u00ednek bezbarv\u00e1 kapalina ostr\u00e9ho z\u00e1pachu, dokonale m\u00edsiteln\u00e1 s vodou, s ethanolem i dimethyletherem. Jej\u00ed vodn\u00fd roztok o koncentraci od 8 % se naz\u00fdv\u00e1 ocet.<\/p>\n<p>Ocet je jemn\u00fdm druhem dezinfekce. Odma\u0161\u0165uje, odstra\u0148uje z\u00e1pach, \u010dist\u00ed sklo, zbavuje usazenin v\u00e1pn\u00edku, skvrn. Na \u010di\u0161t\u011bn\u00ed se doporu\u010duje pou\u017e\u00edvat jenom \u0159ed\u011bn\u00ed v pom\u011bru 1:8 v z\u00e1vislosti od \u010di\u0161t\u011bn\u00e9ho materi\u00e1lu.<\/p>\n<h3>Z mikrobiologick\u00e9ho hlediska<\/h3>\n<p>Starov\u011bc\u00ed \u0158\u00edman\u00e9 pou\u017e\u00edvali ocet hlavn\u011b k dezinfekci pitn\u00e9 vody. Ale ve st\u0159edov\u011bku byl tento p\u0159\u00edrodn\u00ed dezinfek\u010dn\u00ed prost\u0159edek pou\u017eit k prevenci \u0161\u00ed\u0159en\u00ed n\u011bkolika nemoc\u00ed, v\u010detn\u011b d\u00fdmov\u00e9ho moru. Byl pou\u017e\u00edv\u00e1n na dezinfekci zran\u011bn\u00ed b\u011bhem prvn\u00ed sv\u011btov\u00e9 v\u00e1lky. Skute\u010dnost, \u017ee ocet m\u00e1 antimikrobi\u00e1ln\u00ed vlastnosti byla zn\u00e1m\u00e1 ji\u017e od starov\u011bku. Studie tak\u00e9 pouk\u00e1zaly na to, \u017ee je bezpe\u010dn\u00fd a tak\u00e9 pat\u0159\u00ed mezi nej\u00fa\u010dinn\u011bj\u0161\u00ed p\u0159\u00edrodn\u00ed a dezinfek\u010dn\u00ed prost\u0159edky. Na rozd\u00edl od mnoha komer\u010dn\u00edch dezinfek\u010dn\u00edch prost\u0159edk\u016f je ekologicky nez\u00e1vadn\u00fd a netoxick\u00fd, a proto bezpe\u010dn\u00fd pro \u010di\u0161t\u011bn\u00ed p\u0159edm\u011bt\u016f pro dom\u00e1cnost. Kv\u016fli sv\u00e9 kyselosti m\u016f\u017ee ocet zab\u00edt bakterie a mikroorganismy. To se st\u00e1v\u00e1 efektivn\u011bj\u0161\u00ed, kdy\u017e se kombinuje se sol\u00ed nebo peroxidem vod\u00edku. P\u0159i pou\u017eit\u00ed spolu s peroxidem vod\u00edku nebo sol\u00ed m\u016f\u017ee zab\u00edt pl\u00edsn\u011b a inhibovat r\u016fst bakteri\u00ed E. coli. Tak\u00e9 nap\u0159. Salmonely nejsou v \u017e\u00e1dn\u00fdch kysel\u00fdch po\u017eivatin\u00e1ch, to znamen\u00e1, \u017ee je nenalezneme v potravin\u00e1ch s p\u0159\u00eddavkem octa, nap\u0159\u00edklad v majon\u00e9ze vyroben\u00e9 ze \u017eloutk\u016f. M\u016f\u017eete jej tedy pou\u017e\u00edt jako pom\u016fcku pro \u00faklid v kuchyni, v prostor\u00e1ch va\u0161i restaurace, v dom\u00e1cnosti, ale na d\u016fkladn\u00e9 a spr\u00e1vn\u00e9 \u010di\u0161t\u011bn\u00ed a dezinfekci je pot\u0159eba pou\u017e\u00edt schv\u00e1len\u00e9 \u010dist\u00edc\u00ed prost\u0159edky stanoven\u00e9 va\u0161im sanita\u010dn\u00edm \u0159\u00e1dem, p\u0159\u00edpadn\u011b vyhledat \u010dist\u00edc\u00ed p\u0159\u00edpravky s p\u0159\u00eddavkem octu.<\/p>\n<p><strong>DOPORU\u010cEN\u00cd<\/strong>: Pro ozna\u010den\u00ed octa, ji\u017e ur\u010den\u00e9ho k dezinfekci v kuchyni, se doporu\u010duje jasn\u00fd a viditeln\u00fd text, aby bylo z\u0159ejm\u00e9, \u017ee nejde o potravin\u00e1\u0159sk\u00fd ocet. M\u016f\u017eete pou\u017e\u00edt nap\u0159\u00edklad: \u201eOcet na sanitaci \u2013 NEPOU\u017d\u00cdVAT DO J\u00cdDLA\u201c, \u201eDezinfek\u010dn\u00ed ocet \u2013 POUZE NA \u010cI\u0160T\u011aN\u00cd\u201c nebo jin\u00e9 vhodn\u00e9 ozna\u010den\u00ed.
