Za zji\u0161t\u011bn\u00e9 nedostatky\u00a0pra\u017e\u0161t\u00ed hygienici ud\u011blili celkem 548 sankc\u00ed v celkov\u00e9 v\u00fd\u0161i 2 876 200 K\u010d. Za m\u00e9n\u011b z\u00e1va\u017en\u00e9 nedostatky dostali provozovatel\u00e9 86 napomenut\u00ed. Kontroly prob\u00edhaly zejm\u00e9na v\u00a0restaurac\u00edch,\u00a0j\u00eddeln\u00e1ch, provozovn\u00e1ch z\u00e1vodn\u00edho stravov\u00e1n\u00ed a kav\u00e1rn\u00e1ch.<\/strong><\/h2>\n<p><!--more--><\/p>\n<p>V r\u00e1mci st\u00e1tn\u00edho zdravotn\u00edho dozoru HSHMP v roce 2018 rovn\u011b\u017e odeb\u00edrala\u00a0vzorky pokrm\u016f a surovin nejen k mikrobiologick\u00fdm \u010di chemick\u00fdm rozbor\u016fm, ale \u00a0i senzorick\u00e9mu posouzen\u00ed. Celkem do\u0161lo k\u00a0odb\u011br\u016fm 228 vzork\u016f, z nich\u017e 11 nevyhov\u011blo. Jednalo se o 6 vzork\u016f zmrzlin, 1 vzorek ledov\u00e9 t\u0159\u00ed\u0161t\u011b a\u00a04\u00a0vzorky pitn\u00e9 vody.<\/p>\n<p>Ve 220 p\u0159\u00edpadech pra\u017e\u0161t\u00ed hygienici zaznamenali pochyben\u00ed v obecn\u00fdch po\u017eadavc\u00edch na potravin\u00e1\u0159sk\u00e9 prostory\u00a0<em>(\u00faprava st\u011bn, podlah, v\u011btr\u00e1n\u00ed, sanit\u00e1rn\u00ed za\u0159\u00edzen\u00ed pro zam\u011bstnance, vybaven\u00ed d\u0159ezy, umyvadly);\u00a0<\/em>jde o v\u016fbec nej\u010dast\u011bji se vyskytuj\u00edc\u00ed pochyben\u00ed. Stejn\u011b \u010dasto, 220 kr\u00e1t, \u00a0se d\u00e1le v provozovn\u00e1ch vyskytovala\u00a0pochyben\u00ed v ozna\u010dov\u00e1n\u00ed rozpracovan\u00fdch pokrm\u016f, polotovar\u016f a cukr\u00e1\u0159sk\u00fdch v\u00fdrobk\u016f. Pra\u017e\u0161t\u00ed hygienici zaznamenali proh\u0159e\u0161ky i v po\u017eadavc\u00edch na p\u0159\u00edjem a skladov\u00e1n\u00ed potravin a surovin pro p\u0159\u00edpravu pokrm\u016f (ve 185 p\u0159\u00edpadech), na hygienu provozu (v 181 p\u0159\u00edpadech) a na ochranu potravin a\u00a0pokrm\u016f p\u0159ed kontaminac\u00ed p\u0159i manipulaci (ve 177 p\u0159\u00edpadech). V 156 p\u0159\u00edpadech pak nebyly dodr\u017eeny postupy zalo\u017een\u00e9 na z\u00e1sad\u00e1ch HACCP. <a href=\"http:\/\/ehaccp.cz\/\" target=\"_blank\" rel=\"noopener\">HACCP<\/a> je preventivn\u00ed syst\u00e9m stanoven\u00ed kritick\u00fdch kontroln\u00edch bod\u016f, kter\u00fd je n\u00e1strojem zaji\u0161t\u011bn\u00ed a \u0159\u00edzen\u00ed kvality a zdravotn\u00ed nez\u00e1vadnosti potravin b\u011bhem v\u0161ech \u010dinnost\u00ed, kter\u00e9 souvisej\u00ed s p\u0159\u00edpravou, zpracov\u00e1n\u00edm, skladov\u00e1n\u00edm, manipulac\u00ed, p\u0159epravou a prodejem fin\u00e1ln\u00edmu z\u00e1kazn\u00edkovi, tedy spot\u0159ebiteli. Ve sledovan\u00e9m kontrolovan\u00e9m obdob\u00ed pra\u017e\u0161t\u00ed hygienici nemuseli p\u0159istoupit k okam\u017eit\u00e9mu uzav\u0159en\u00ed \u017e\u00e1dn\u00e9 z kontrolovan\u00fdch provozoven.<\/p>\n<p>Prim\u00e1rn\u00edm c\u00edlem b\u011bhem na\u0161\u00ed kontroln\u00ed \u010dinnosti nen\u00ed represe a z toho plynouc\u00ed ud\u011blen\u00ed sankc\u00ed a\u00a0finan\u010dn\u00edho postihu. Pr\u00e1v\u011b naopak. Na\u0161e snaha je b\u011bhem kontroln\u00ed \u010dinnosti provozovatel\u016fm prakticky vysv\u011btlit d\u016fvody nutnosti hygienick\u00e9 p\u0159edpisy dodr\u017eovat.
