Vyhneme se t\u00edm znehodnocen\u00ed v\u00fdrobku, vlivem p\u016fsoben\u00ed vy\u0161\u0161\u00edch teplot b\u011bhem p\u0159epravy.<!--more--><\/h2>\n<p>Plat\u00ed to nejenom p\u0159i n\u00e1kupu potravin do dom\u00e1cnost\u00ed, ale i do prodejen potravin, sklad\u016f i restaurac\u00ed a dal\u0161\u00edch typ\u016f potravin\u00e1\u0159sk\u00fdch za\u0159\u00edzen\u00ed.<\/p>\n<h3><strong>Z\u00e1sady p\u0159i zach\u00e1zen\u00ed s potravinami p\u0159i provozu prodejen <\/strong><\/h3>\n<p>Dopravn\u00ed prost\u0159edky pro dopravu potravin lze rozd\u011blit na vozidla s \u0159\u00edzen\u00fdmi mikroklimatick\u00fdmi podm\u00ednkami v lo\u017en\u00e9m prostoru (chlad\u00edc\u00ed \u2013 izotermick\u00e9, mraz\u00edc\u00ed) a na vozidla s upravenou lo\u017enou plochou pro dopravu balen\u00fdch a nebalen\u00fdch potraviny. Dopravn\u00ed prost\u0159edky mus\u00ed b\u00fdt kryt\u00e9, snadno \u010distiteln\u00e9 a dezinfikovateln\u00e9. Nesm\u011bj\u00ed se pou\u017e\u00edvat k jin\u00fdm \u00fa\u010del\u016fm. P\u0159i doprav\u011b potraviny mus\u00ed b\u00fdt zabezpe\u010dena ochrana potraviny p\u0159ed jak\u00fdmkoli zne\u010di\u0161t\u011bn\u00edm a znehodnocen\u00edm. Dodr\u017een\u00ed hygienick\u00fdch podm\u00ednek dopravy koresponduje s po\u017eadavky skladov\u00e1n\u00ed a vystavov\u00e1n\u00ed na potravin\u00e1\u0159sk\u00e9 provozovn\u011b. Dodr\u017een\u00ed t\u011bchto podm\u00ednek je nutn\u00e9 s v\u00fdrobcem projednat p\u0159i uzav\u00edr\u00e1n\u00ed p\u0159\u00edslu\u0161n\u00fdch smluv o dod\u00e1vk\u00e1ch potravin.<\/p>\n<p>Mezi nej\u010dast\u011bj\u0161\u00ed z\u00e1vady p\u0159i p\u0159eprav\u011b pat\u0159\u00ed nevyhovuj\u00edc\u00ed teplotn\u00ed podm\u00ednky p\u0159i p\u0159eprav\u011b, p\u0159ekra\u010duj\u00edc\u00ed v\u00a0n\u011bkter\u00fdch p\u0159\u00edpadech stanoven\u00e9 teploty, d\u00e1le p\u0159eprava surovin a potravin p\u0159epravci neregistrovan\u00fdmi u krajsk\u00fdch veterin\u00e1rn\u00edch spr\u00e1v, zne\u010di\u0161t\u011bn\u00ed nebo \u0161patn\u00fd technick\u00fd stav p\u0159epravn\u00edho prostoru, z\u00e1vady ve zna\u010den\u00ed nebo v pr\u016fvodn\u00ed dokumentaci k p\u0159epravovan\u00fdm surovin\u00e1m a potravin\u00e1m.<\/p>\n<h3><strong>Z\u00e1sady p\u0159i rozvozu a p\u0159i p\u0159eprav\u011b pokrm\u016f<\/strong><\/h3>\n<p>Vyhl\u00e1\u0161ka 137\/2004 Sb. o hygienick\u00fdch po\u017eadavc\u00edch na stravovac\u00ed slu\u017eby a o z\u00e1sad\u00e1ch osobn\u00ed a provozn\u00ed hygieny p\u0159i \u010dinnostech epidemiologicky z\u00e1va\u017en\u00fdch \u00a7 25, \u0159\u00edk\u00e1:<\/p>\n<p>Rozvoz, p\u0159eprava a uv\u00e1d\u011bn\u00ed produkt\u016f do ob\u011bhu<\/p>\n<p>(1)\u00a0P\u0159i rozvozu, p\u0159eprav\u011b a uv\u00e1d\u011bn\u00ed do ob\u011bhu mus\u00ed b\u00fdt produkty chr\u00e1n\u011bny p\u0159ed mikrobi\u00e1ln\u00ed kontaminac\u00ed, zne\u010di\u0161t\u011bn\u00edm nebo jin\u00fdm naru\u0161en\u00edm zdravotn\u00ed nez\u00e1vadnosti.<br \/>\n(2)\u00a0Tepl\u00e9 pokrmy ur\u010den\u00e9 k p\u0159\u00edm\u00e9 spot\u0159eb\u011b se pod\u00e1vaj\u00ed bezprost\u0159edn\u011b po v\u00fdrob\u011b, nejd\u00e9le v\u0161ak 4 hodiny od dokon\u010den\u00ed jejich tepeln\u00e9 \u00fapravy. Do t\u00e9to doby se zapo\u010d\u00edt\u00e1v\u00e1 \u010das pot\u0159ebn\u00fd pro kone\u010dnou \u00fapravu pokrm\u016f, pln\u011bn\u00ed do p\u0159epravn\u00edch obal\u016f, rozvoz a p\u0159epravu. Pokud nelze tuto \u010dasovou podm\u00ednku pro v\u00fddej zajistit, pokrmy pro v\u00fddej se postupn\u011b dov\u00e1\u0159ej\u00ed nebo se regeneruj\u00ed pokrmy zchlazen\u00e9, pop\u0159\u00edpad\u011b zmrazen\u00e9.<br \/>\n(3)\u00a0Po dobu rozvozu, p\u0159epravy a v\u00fddeje tepl\u00fdch pokrm\u016f mus\u00ed b\u00fdt zachov\u00e1na teplota pokrmu nejm\u00e9n\u011b +65 stup\u0148\u016f C.<br \/>\n(4)\u00a0Tepl\u00fd pokrm mus\u00ed m\u00edt v dob\u011b jeho pod\u00e1n\u00ed spot\u0159ebiteli teplotu nejm\u00e9n\u011b +63 stup\u0148\u016f C.<br \/>\n(5)\u00a0Tepl\u00e9 pokrmy nevydan\u00e9 ve lh\u016ft\u011b podle odstavce 2 mus\u00ed b\u00fdt ihned vylou\u010deny z dal\u0161\u00edho pou\u017eit\u00ed ve stravovac\u00edch slu\u017eb\u00e1ch; nelze je tedy po uplynut\u00ed t\u00e9to lh\u016fty d\u00e1le skladovat, oh\u0159\u00edvat, zchlazovat ani zmrazovat.<\/p>\n<h3>Jak\u00e9 teploty m\u00e1me tedy dodr\u017eovat?<\/h3>\n<p>P\u0159i nevhodn\u00fdch teplot\u00e1ch p\u0159i p\u0159eprav\u011b, m\u016f\u017ee doj\u00edt ke znehodnocen\u00ed potravin a zm\u011bn\u00e1m, kter\u00e9 mohou v\u00e9st ke vzniku \u0159ady aliment\u00e1rn\u00edch n\u00e1kaz. Spr\u00e1vn\u00e9 podm\u00ednky p\u0159epravy tedy umo\u017e\u0148uje zabezpe\u010dit pro str\u00e1vn\u00edky zdravotn\u011b nez\u00e1vadn\u00e9 potraviny a pokrmy a \u00fa\u010dinn\u011b tak p\u0159edch\u00e1zet mo\u017en\u00e9mu nebezpe\u010d\u00ed vzniku onemocn\u011bn\u00ed z potravin. Mezi hlavn\u00ed \u010dinitele, kte\u0159\u00ed b\u011bhem p\u0159epravy ovliv\u0148uj\u00ed zdravotn\u00ed nez\u00e1vadnost a kvalitu potravin, pat\u0159\u00ed:<\/p>\n<ul>\n<li>teplota vzduchu,<\/li>\n<li>vlhkost vzduchu,<\/li>\n<li>zp\u016fsob ulo\u017een\u00ed a \u010distota lo\u017en\u00ed plochy.<\/li>\n<\/ul>\n<p>Z obecn\u00e9ho hlediska m\u016f\u017eeme aplikovat podm\u00ednky, za kter\u00fdch potraviny skladujeme ve skladech. Sklady potraviny rozd\u011blujeme na:<\/p>\n<ul>\n<li><strong>such\u00e9<\/strong>: s teplotou zpravidla kolem 18\u00b0C a\u017e 24\u00b0C. Pou\u017e\u00edvaj\u00ed se na skladov\u00e1n\u00ed nap\u0159. cukru, pochutin, lu\u0161t\u011bnin, pe\u010diva. Okna v t\u011bchto skladech \u010dasto b\u00fdvaj\u00ed nat\u0159ena modrou barvou. V p\u0159\u00edpad\u011b otev\u00edrateln\u00fdch oken jsou vybavena s\u00edt\u011bmi proti mo\u017en\u00e9mu vnik\u00e1n\u00ed hmyzu.<\/li>\n<li><strong>chladn\u00e9<\/strong>: jedn\u00e1 se o sklady ve sklepn\u00edch prostor\u00e1ch, kde se udr\u017euje p\u0159irozen\u011b n\u00edzk\u00e1 teplota. Pou\u017e\u00edvaj\u00ed se p\u0159edev\u0161\u00edm na skladov\u00e1n\u00ed ovoce a zeleniny. Proto\u017ee v t\u011bchto skladech se p\u0159irozen\u011b udr\u017euje i vysok\u00e1 vlhkost vzduchu, mus\u00ed b\u00fdt dob\u0159e v\u011btr\u00e1ny.<\/li>\n<li><strong>chlazen\u00e9<\/strong>: jedn\u00e1 se o chladnice a chladic\u00ed boxy s teplotou zpravidla do 10\u00b0C v z\u00e1vislosti na druhu skladovan\u00e9 potraviny. V t\u011bchto skladech se uchov\u00e1vaj\u00ed potraviny, kter\u00e9 se p\u0159i vy\u0161\u0161\u00edch teplot\u00e1ch rychle kaz\u00ed (nap\u0159. ml\u00e9\u010dn\u00e9 v\u00fdrobky, maso, lah\u016fdk\u00e1\u0159sk\u00e9 v\u00fdrobky).<\/li>\n<li><strong>mraz\u00edc\u00ed<\/strong>: jedn\u00e1 se o mrazni\u010dky a mrazic\u00ed boxy s teplotou zpravidla v rozmez\u00ed -18\u00b0C a\u017e\u00a0-22\u00b0C v z\u00e1vislosti na druhu skladovan\u00e9 potraviny.
