Z karcinogenn\u00edch l\u00e1tek se jedn\u00e1 p\u0159edev\u0161\u00edm o heterocyklick\u00e9 aminy (HCA) a polycyklick\u00e9 aromatick\u00e9 uhlovod\u00edky (PAU). <strong>PAU<\/strong> pat\u0159\u00ed mezi \u0161kodliv\u00e9 l\u00e1tky \u017eivotn\u00edho prost\u0159ed\u00ed a je jich zn\u00e1ma cel\u00e1 \u0159ada. Vznikl\u00e9 spaliny jsou tepl\u00fdm vzduchem op\u011bt vyneseny na grilovanou potravinu a t\u00edm ji zne\u010di\u0161\u0165uj\u00ed. Obsah PAU velmi z\u00e1vis\u00ed na obsahu tuku v p\u0159ipravovan\u00e9 potravin\u011b. Plat\u00ed, \u017ee \u010d\u00edm tu\u010dn\u011bj\u0161\u00ed potravina, t\u00edm vy\u0161\u0161\u00ed produkce PAU.<\/p>\n<p>PAU d\u00e1le vznikaj\u00ed p\u0159i ho\u0159en\u00ed d\u0159eva, zejm\u00e9na p\u0159i spalov\u00e1n\u00ed smolnat\u00e9ho nebo borov\u00e9ho d\u0159eva. Velk\u00e9 mno\u017estv\u00ed PAU se tvo\u0159\u00ed tak\u00e9 p\u0159i p\u0159\u00edm\u00e9m vystaven\u00ed grilovan\u00e9 potraviny ohni. Z t\u011bchto d\u016fvod\u016f pou\u017e\u00edvejte p\u0159i grilov\u00e1n\u00ed speci\u00e1ln\u00ed alobalov\u00e9 t\u00e1cky nebo potravinu ur\u010denou ke grilov\u00e1n\u00ed zabalte do alobalu. To m\u00e1 tu v\u00fdhodu, \u017ee m\u016f\u017eete z\u00e1rove\u0148 p\u0159ipravovat maso, zeleninu i p\u0159\u00edlohu a v\u016fn\u011b i chut\u011b se kr\u00e1sn\u011b prolnou.<\/p>\n<p><strong>HCA<\/strong> jsou dus\u00edkat\u00e9 slou\u010deniny, kter\u00e9 vznikaj\u00ed v potravin\u00e1ch \u017eivo\u010di\u0161n\u00e9ho p\u016fvodu p\u0159i jejich tepeln\u00e9m zpracov\u00e1n\u00ed za vysok\u00fdch teplot. HCA se vytv\u00e1\u0159ej\u00ed v procesu hn\u011bdnut\u00ed a to hlavn\u011b v tekutin\u011b uvol\u0148ovan\u00e9 p\u0159i z\u00e1h\u0159evu masa. U zv\u00ed\u0159at byla prok\u00e1z\u00e1na karcinogenita, u lid\u00ed chyb\u00ed dostate\u010dn\u00e9 d\u016fkazy, u experiment\u00e1rn\u00edch zv\u00ed\u0159at vznikaly n\u00e1dory prsu, plic a k\u016f\u017ee.
