Dobr\u00e1 spr\u00e1va pro slovensk\u00e9 restaurace"},"content":{"rendered":"<p>Od 1. j\u00fana 2017 vstupuje do platnosti novela vyhl\u00e1\u0161ky Ministerstva zdravotn\u00edctva SR \u010d. 533\/2007 Z. z., ktor\u00e1 upravuje pravidl\u00e1 pre pod\u00e1vanie tat\u00e1rskeho bifteku v\u00a0re\u0161taur\u00e1ci\u00e1ch.<!--more--> \u00darad verejn\u00e9ho zdravotn\u00edctva Slovenskej republiky pribli\u017euje zmeny, ktor\u00fdmi vy\u0161iel v\u00a0\u00fastrety prev\u00e1dzkovate\u013eom i\u00a0spotrebite\u013eom. Z\u00e1rove\u0148 pripom\u00edna mo\u017en\u00e9 epidemiologick\u00e9 rizik\u00e1 s\u00favisiace s\u00a0konzum\u00e1ciou tepelne nespracovan\u00e9ho m\u00e4sa a\u00a0vajec pre ur\u010dit\u00e9 skupiny \u013eud\u00ed.<br \/>\n<b>\u201eTatar\u00e1ky\u201c v\u00a0re\u0161taur\u00e1ci\u00e1ch povolen\u00e9<\/b><\/p>\n<p>Novela upravuje viacer\u00e9 doteraj\u0161ie postupy v\u00a0prev\u00e1dzkach verejn\u00e9ho stravovania. <i>\u201ePrev\u00e1dzky spolo\u010dn\u00e9ho stravovania, ako s\u00fa napr. re\u0161taur\u00e1cie, m\u00f4\u017eu od 1. j\u00fana 2017 pripravova\u0165 pokrmy z\u00a0tepelne nespracovan\u00e9ho alebo \u010diasto\u010dne nespracovan\u00e9ho m\u00e4sa, r\u00fdb a\u00a0in\u00fdch morsk\u00fdch \u017eivo\u010d\u00edchov. Patr\u00ed tam aj tzv. tat\u00e1rsky biftek. Do tak\u00fdchto pokrmov je mo\u017en\u00e9 prid\u00e1va\u0165 surov\u00e9 slepa\u010die vajcia. <b>Vajcia v\u0161ak musia by\u0165 len z\u00a0registrovan\u00fdch a\u00a0kontrolovan\u00fdch chovov<\/b>, pri pr\u00edprave z\u00a0nich je potrebn\u00e9 dodr\u017eiava\u0165 z\u00e1sady \u010derstvosti vajec a\u00a0hygieny pri pr\u00edprave pokrmu.<\/i>\u201c<\/p>\n<p>zd\u00f4raz\u0148uje MUDr. Iveta Truskov\u00e1, PhD., ved\u00faca odboru hygieny v\u00fd\u017eivy, bezpe\u010dnosti potrav\u00edn a\u00a0kozmetick\u00fdch v\u00fdrobkov \u00daradu verejn\u00e9ho zdravotn\u00edctva Slovenskej republiky. Tak\u00e9to pokrmy mo\u017eno \u00a0pod\u00e1va\u0165 bezprostredne po\u00a0 ich pr\u00edprave a\u00a0 len v\u00a0prev\u00e1dzkach verejn\u00e9ho stravovania, ako s\u00fa napr. re\u0161taur\u00e1cie. Nemo\u017eno ich pripravova\u0165 ani pod\u00e1va\u0165, napr. v\u00a0st\u00e1nkoch s\u00a0r\u00fdchlym ob\u010derstven\u00edm, v\u00a0z\u00e1vodnom stravovan\u00ed a\u00a0v\u00a0in\u00fdch typoch uzavret\u00e9ho stravovania.<i><\/i><\/p>\n<p><b><br \/>\nNahl\u00e1senie pod\u00e1vania pokrmov<\/b><\/p>\n<p>\u010eal\u0161ou zmenou je oznamovacia povinnos\u0165 prev\u00e1dzok verejn\u00e9ho stravovania. Ak sa v\u00a0re\u0161taur\u00e1cii rozhodn\u00fa pripravova\u0165 a\u00a0pod\u00e1va\u0165 pokrmy z\u00a0tepelne nespracovan\u00e9ho m\u00e4sa, prev\u00e1dzkovate\u013e zariadenia verejn\u00e9ho stravovania je povinn\u00fd ozn\u00e1mi\u0165 to miestne pr\u00edslu\u0161n\u00e9mu region\u00e1lnemu \u00faradu verejn\u00e9ho zdravotn\u00edctva v\u00a0SR.<\/p>\n<p>Pri ohlasovacej povinnosti sa postupuje pod\u013ea s\u00fa\u010dasne platnej legislat\u00edvy, t. j. \u00a7 6 ods. 1 a\u00a0Pr\u00edlohy 1\u00a0z\u00e1kona \u010d. 152\/1995 Z. z. o\u00a0potravin\u00e1ch v\u00a0znen\u00ed neskor\u0161\u00edch predpisov.
