Z\u00e1klad je p\u0159ej\u00edmka tovaru.<\/h2>\n<p><!--more--><\/p>\n<p>\u00da\u010delem p\u0159ej\u00edmky je, aby do potravin\u00e1\u0159sk\u00e9ho provozu nepronikly <strong>nekvalitn\u00ed a\u00a0zdravotn\u011b z\u00e1vadn\u00e9 potraviny<\/strong>. P\u0159ej\u00edmka je zpravidla prov\u00e1d\u011bna ve dvou stupn\u00edch:<\/p>\n<ul>\n<li>Vizu\u00e1ln\u00ed kontrola ihned p\u0159i dod\u00e1n\u00ed za \u00fa\u010dasti pracovn\u00edka v\u00fdrobn\u00ed organizace nebo p\u0159epravce<\/li>\n<li>Detailn\u00ed kontrola p\u0159i rozbalov\u00e1n\u00ed dod\u00e1vky na uskladn\u011bn\u00ed<\/li>\n<\/ul>\n<p>U potravin\u00e1\u0159sk\u00fdch v\u00fdrobk\u016f nebalen\u00fdch dod\u00e1van\u00fdch p\u0159\u00edmo od v\u00fdrobce, tj.maso, ryby, masn\u00e9 v\u00fdrobky, pek\u00e1rensk\u00e9, cukr\u00e1\u0159sk\u00e9 a lah\u016fdk\u00e1\u0159sk\u00e9 v\u00fdrobky, je\u00a0kontrola dod\u00e1van\u00e9ho zbo\u017e\u00ed toto\u017en\u00e1 s p\u0159ej\u00edmkou. <strong>P\u0159ej\u00edmka<\/strong> potravin se st\u00e1v\u00e1 pro\u00a0provozovatele <strong>z\u00e1kladn\u00edm<\/strong> <strong>stupn\u011bm<\/strong> kontroly zdravotn\u00ed nez\u00e1vadnosti v\u00fdrobku a nelze ji\u00a0pouze pova\u017eovat za form\u00e1ln\u00ed kontrolu dod\u00e1van\u00e9ho mno\u017estv\u00ed. Po p\u0159ej\u00edmce zbo\u017e\u00ed nese\u00a0pr\u00e1vn\u00ed odpov\u011bdnost za zdravotn\u00ed nez\u00e1vadnost a kvalitu provozovatel. Zdravotn\u00ed\u00a0z\u00e1vadnost je \u010dasto prov\u00e1zena i jin\u00fdmi jakostn\u00edmi vadami jako nap\u0159. zm\u011bnou\u00a0smyslov\u00fdch vlastnost\u00ed, nespr\u00e1vn\u00fdm a ne\u00fapln\u00fdm ozna\u010den\u00edm v\u00fdrobku, poru\u0161en\u00edm\u00a0celistvosti obalu apod.<\/p>\n<figure id=\"attachment_1887\" aria-describedby=\"caption-attachment-1887\" style=\"width: 304px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-1887\" src=\"http:\/\/potravinyx.cz\/wp-content\/uploads\/2016\/06\/beer-888078_640.jpg\" alt=\"pivo\" width=\"304\" height=\"381\" srcset=\"https:\/\/potravinyx.cz\/wp-content\/uploads\/2016\/06\/beer-888078_640.jpg 510w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2016\/06\/beer-888078_640-239x300.jpg 239w, https:\/\/potravinyx.cz\/wp-content\/uploads\/2016\/06\/beer-888078_640-478x600.jpg 478w\" sizes=\"auto, (max-width: 304px) 100vw, 304px\" \/><figcaption id=\"caption-attachment-1887\" class=\"wp-caption-text\">kontrola kvantity, doby spot\u0159eby, mno\u017estv\u00ed<\/figcaption><\/figure>\n<p>Je nezbytn\u00e9 m\u00edt st\u00e1le na pam\u011bti, \u017ee po expedici od v\u00fdrobce mohla kvalita a\u00a0zdravotn\u00ed nez\u00e1vadnost potraviny doznat zna\u010dn\u00e9 \u00fajmy, a to bu\u010f nap\u0159. nedodr\u017een\u00edm\u00a0podm\u00ednek p\u0159i reexpedici od v\u00fdrobce, b\u011bhem transportu (podm\u00ednky \u00fachovy \u2013 teplota,\u00a0\u010distota p\u0159epravek, lo\u017en\u00e9 plochy atd.), p\u0159i skladov\u00e1n\u00ed a distribuci.<\/p>\n<p>P\u0159ej\u00edmka se d\u011bl\u00ed na p\u0159ej\u00edmku mno\u017estv\u00ed a na p\u0159ej\u00edmku jakosti (kvantitativn\u00ed a\u00a0kvalitativn\u00ed p\u0159ej\u00edmka). U jakostn\u00ed p\u0159ej\u00edmky je d\u016fle\u017eit\u00e1 kontrola smyslov\u00fdch vlastnost\u00ed\u00a0potravin ( barva, v\u016fn\u011b, chu\u0165, konzistence ). Tato kontrola jakosti potravin\u00e1\u0159sk\u00fdch\u00a0v\u00fdrobk\u016f se prov\u00e1d\u00ed:<\/p>\n<p><strong>Zrakem<\/strong> \u2013 kontroluje se celkov\u00fd vzhled v\u00fdrobku, zejm\u00e9na obal, jeho neporu\u0161enost,\u00a0n\u00e1zev v\u00fdrobku, datum v\u00fdroby a spot\u0159eby, tj. zda v\u00fdrobek nem\u00e1 pro\u0161lou dobu\u00a0spot\u0159eby nebo minim\u00e1ln\u00ed trvanlivosti, u balen\u00fdch potravin zda nen\u00ed poru\u0161ena\u00a0celistvost obalu, zda nen\u00ed bomb\u00e1\u017eov\u00e1n nebo napaden koroz\u00ed. U n\u00e1poj\u016f \u010dirost,\u00a0p\u0159\u00edtomnost kalu \u010di sra\u017eenin. U pe\u010diva, s\u00fdr\u016f, m\u00e1sla, masn\u00fdch v\u00fdrobk\u016f, lah\u016fdk\u00e1\u0159sk\u00fdch,\u00a0cukr\u00e1\u0159sk\u00fdch v\u00fdrobk\u016f apod., zda nejsou zdeformovan\u00e9 nebo zne\u010di\u0161t\u011bn\u00e9. M\u016f\u017ee se jednat o potraviny zjevn\u011b\u00a0naru\u0161en\u00e9 nebo s prob\u00edhaj\u00edc\u00edmi autolytick\u00fdmi pochody (hnit\u00ed, kva\u0161en\u00ed). Potraviny mus\u00ed\u00a0odpov\u00eddat do stanoven\u00e9 doby pou\u017eitelnosti (\u201e<strong>spot\u0159ebuj do<\/strong>\u201c) mikrobiologick\u00fdm<br \/>\npo\u017eadavk\u016fm uveden\u00fdm v p\u0159\u00edslu\u0161n\u00e9 vyhl\u00e1\u0161ce.
