Nicm\u00e9n\u011b velk\u00e9 kusy masa nebo dr\u016fbe\u017ee je \u010dasto zapot\u0159eb\u00ed p\u0159ed tepeln\u00fdm opracov\u00e1n\u00edm rozmrazit. Rozmrazov\u00e1n\u00ed je nezbytn\u00e9 pl\u00e1novat v p\u0159edstihu, aby byl zaji\u0161t\u011bn dostatek \u010dasu na dan\u00fd \u00fakon.<\/p>\n\n\n\n<p>Pokud se rozmrazov\u00e1n\u00ed prov\u00e1d\u00ed jako operace odd\u011blen\u00e1 od tepeln\u00e9ho opracov\u00e1n\u00ed, prov\u00e1d\u00ed se v\u00fdhradn\u011b:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>v chladni\u010dce nebo pomoc\u00ed speci\u00e1ln\u00edho technick\u00e9ho za\u0159\u00edzen\u00ed, kde je udr\u017eov\u00e1na nejvy\u0161\u0161\u00ed teplota 4\u00b0C, nebo<\/li><li>v pr\u016fmyslov\u00e9 mikrovlnn\u00e9 troub\u011b, a to pouze tehdy, pokud bude potravina neprodlen\u011b p\u0159enesena do konven\u010dn\u00edch varn\u00fdch jednotek jako sou\u010d\u00e1st nep\u0159etr\u017eit\u00e9ho procesu tepeln\u00e9 opracov\u00e1n\u00ed, nebo pokud cel\u00fd nep\u0159eru\u0161ovan\u00fd proces tepeln\u00e9ho opracov\u00e1n\u00ed prob\u00edh\u00e1 v mikrovlnn\u00e9 troub\u011b.<\/li><\/ol>\n\n\n\n<p><strong>P\u0159\u00edpadov\u00e1 studie:<\/strong><\/p>\n\n\n\n<p>Pozorov\u00e1n\u00ed senzorick\u00e9 kvality a bezpe\u010dnosti potravin z vykost\u011bn\u00fdch ku\u0159ec\u00edch prsou rychle rozmra\u017een\u00fdch pono\u0159en\u00edm v hork\u00e9 vod\u011b<\/p>\n\n\n\n<p>Porovn\u00e1van\u00e9 byly rozmrazovan\u00e9 vykost\u011bn\u00e9 ku\u0159ec\u00ed prsa porcovan\u00e9, dv\u011bma zp\u016fsoby. Pono\u0159en\u00edm do hork\u00e9 vody (60\u00b0C) a ponech\u00e1n\u00edm v chladni\u010dce. Rozmrazen\u00ed v hork\u00e9 vod\u011b byl v\u00fdznamn\u011b rychlej\u0161\u00ed (2 a\u017e 8,5min) ne\u017e rozmrazov\u00e1n\u00ed v chladni\u010dce (10 a\u017e 15,5h). Samoz\u0159ejm\u011b \u010das rozmrazov\u00e1n\u00ed v hork\u00e9 vod\u011b se zvy\u0161uje s n\u00e1r\u016fstem tlou\u0161\u0165ky masa. Smyslov\u00fdm posouzen\u00edm nebylo mo\u017en\u00e9 rozeznat rozd\u00edl, mezi rozmrazen\u00edm v hork\u00e9 vod\u011b a rozmrazov\u00e1n\u00edm v chladni\u010dce, a n\u00e1sledn\u011b grilovan\u00fdch ku\u0159ec\u00edch prsou. Model pro r\u016fst Salmonelly p\u0159edpov\u00edd\u00e1, \u017ee rozmrazovan\u00e9 ku\u0159ec\u00ed prsa v t\u00e9to studii (0,5\u00b0C \/ min), by m\u011bla za n\u00e1sledek ni\u017e\u0161\u00ed zv\u00fd\u0161enou koncentraci salmonely, ne\u017e by se o\u010dek\u00e1valo u skladov\u00e1n\u00ed p\u0159i pokojov\u00e9 teplot\u011b po dobu 4 hodin.<\/p>\n\n\n\n<p>Samoz\u0159ejm\u011b je nutn\u00e9 br\u00e1t v potaz nejenom rozmrazov\u00e1n\u00ed potravin, ale problematika se t\u00fdk\u00e1 i zmrazov\u00e1n\u00ed pokrm\u016f v za\u0159\u00edzen\u00edch spole\u010dn\u00e9ho stravov\u00e1n\u00ed. Legislativn\u00ed po\u017eadavky:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Vyhl\u00e1\u0161ka \u010d. 366\/2005 Sb., o po\u017eadavc\u00edch na n\u011bkter\u00e9 zmrazen\u00e9 potraviny. \u2013 podm\u00ednky zmrazov\u00e1n\u00ed potravin, jak zmrazovat, \u010d\u00edm zmrazovat, jak\u00e1 pou\u017e\u00edvat m\u00e9dia, jak ozna\u010dovat apod.<\/li><li>\u00a7 37 odst. 1 vyhl. \u010d. 137\/2004 Sb., o hygienick\u00fdch po\u017eadavc\u00edch na stravovac\u00ed slu\u017eby \u2013 \u0159e\u0161\u00ed podm\u00ednky zmrazov\u00e1n\u00ed pokrm\u016f.<\/li><li>\u00a7 3 odst. 1 p\u00edsm d a\u017e f ) z. \u010d. 110\/1997 \u2013 jak zajistit p\u0159i v\u00fdrob\u011b a zach\u00e1zen\u00ed s potravinami hygienick\u00e9 podm\u00ednky a po\u017eadavky stanoven\u00e9 t\u00edmto z\u00e1konem, pou\u017e\u00edvat jen takov\u00e1 za\u0159\u00edzen\u00ed a technologick\u00e9 postupy, kter\u00e9 zajist\u00ed zdravotn\u00ed nez\u00e1vadnost potravin.<\/li><li>Dle odst. 15 v \u00favodu na\u0159\u00edzen\u00ed \u010d. 852\/2004 by m\u011bly po\u017eadavky syst\u00e9mu HACCP br\u00e1t v \u00favahu z\u00e1sady obsa\u017een\u00e9 v Codex alimentarius., kde je zmrazov\u00e1n\u00ed uvedeno v bod\u011b 4.3.14.2 a v bod\u011b 7.8.<\/li><\/ul>\n\n\n\n<p>Zmrazov\u00e1n\u00ed nespot\u0159ebovan\u00fdch potravin a hotov\u00fdch pokrm\u016f by m\u011blo b\u00fdt \u0159e\u0161eno v syst\u00e9mu <a rel=\"noreferrer noopener\" href=\"http:\/\/www.ehaccp.cz\" target=\"_blank\">HACCP<\/a>. <\/p>\n","protected":false},"excerpt":{"rendered":"<div class=\"mh-excerpt\"><p>Zmrazen\u00e9 produkty, zvl\u00e1\u0161t\u011b zmrazenou zeleninu, lze va\u0159it bez rozmrazov\u00e1n\u00ed.
