{"id":14,"date":"2019-06-03T07:58:04","date_gmt":"2019-06-03T06:58:04","guid":{"rendered":"http:\/\/localhost\/wordpress\/index.php\/2015\/06\/12\/haccp\/"},"modified":"2020-03-04T11:51:11","modified_gmt":"2020-03-04T10:51:11","slug":"haccp","status":"publish","type":"post","link":"https:\/\/potravinyx.cz\/?p=14","title":{"rendered":"HACCP"},"content":{"rendered":"<h2>Co to vlastne HACCP znamen\u00e1?<\/h2>\n<p>HACCP (hazard analysis and critical control points znamen\u00e1 anal\u00fdzu nebezpe\u010d\u00ed a metodu kontroly kritick\u00fdch kontroln\u00edch bod\u016f) je syst\u00e9m, kter\u00fd byl v 60. letech minul\u00e9ho stolet\u00ed vyvinut v USA <!--more-->pro N\u00e1rodn\u00ed leteckou a vesm\u00edrnou agenturu (NASA), kter\u00e1 pot\u0159ebovala zajistit 100% ochranu v\u0161ech potravinov\u00fdch a v\u00fd\u017eivov\u00fdch produkt\u016f p\u0159ed mechanick\u00fdmi, toxick\u00fdmi, chemick\u00fdmi nebo fyzik\u00e1ln\u00edmi kontaminacemi. HACCP byl vyu\u017e\u00edv\u00e1n k testov\u00e1n\u00ed fin\u00e1ln\u00edch produkt\u016f na potvrzen\u00ed bezpe\u010dnosti potravin jako preventivn\u00ed syst\u00e9m produkce bezpe\u010dn\u00fdch potravin, kter\u00fd m\u011bl univerz\u00e1ln\u00ed uplatn\u011bn\u00ed. Cel\u00fd syst\u00e9m byl vybudov\u00e1n tak, aby vylou\u010dil nebo na maxim\u00e1ln\u00ed mo\u017enou m\u00edru minimalizoval rizika, ktor\u00e9 by mohly zp\u016fsobit kosmonaut\u016fm infekce, nemoci nebo poran\u011bn\u00ed. HACCP vzbudil pozornost mnoha st\u00e1t\u016f, kter\u00e9 ho za\u010dali analyzovat a testovat. Postupn\u011b se st\u00e1val mezin\u00e1rodne akceptov\u00e1n a p\u0159ij\u00edm\u00e1n. V roce 1992 byl HACCP v\u010dlen\u011bn do evropsk\u00e9 legislativy a stal se celosv\u011btov\u00fdm standardem.<\/p>\n<h2>o HACCP<\/h2>\n<p>Vytvo\u0159en\u00ed a zaveden\u00ed syst\u00e9mu HACCP je vy\u017eadov\u00e1no povinn\u011b u v\u0161ech v\u00fdrobc\u016f potravin na z\u00e1klad\u011b Na\u0159\u00edzen\u00ed Evropsk\u00e9ho parlamentu a Rady (ES) \u010d. 852\/2004 ze dne 29. dubna 2004 o hygien\u011b potravin. Tento syst\u00e9m je ur\u010den pro v\u0161echny potravin\u00e1\u0159sk\u00e9 podniky zaji\u0161\u0165uj\u00edc\u00ed v\u00fdrobu, zpracov\u00e1n\u00ed a distribuci potravin a tak\u00e9 pro podniky, kter\u00e9 sv\u00fdmi produkty do potravinov\u00e9ho \u0159et\u011bzce vstupuj\u00ed (zem\u011bd\u011blstv\u00ed, v\u00fdroba obal\u016f, apod.).
