Upravuje podmienky v\u00fdroby potrav\u00edn a ostatn\u00fdch po\u017e\u00edvat\u00edn, manipul\u00e1ciu s nimi a ich uv\u00e1dzanie do obehu. Nadstavbou nad t\u00fdmto z\u00e1kladom je uplat\u0148ovanie bezpe\u010dnostn\u00e9ho syst\u00e9mu prezentovan\u00e9ho syst\u00e9mom HACCP, vlastnou samokontrolou.
